Hello friends! June is finally here and given that it is the official kickoff to summer, I wanted to offer you a dish that can be madeall summer long and includes fresh fruits, herbs and veggies. This months recipe redo is a favorite because it includes my beloved fruit, the avocado! I guarantee that you are going to want this avocado dip served with every snack or meal. It’s lusciously creamy, thanks to the ripe avocado, and bursting with fresh lime and cilantro. If you want to spice it up a bit add a jalapeño or use cayenne pepper.
Like guacamole, you can serve this as a party dip with crunchy vegetables or dollop it onto a salad instead of using dressing. You can also thin out the avocado dip so it becomes more of a sauce, which you can drizzle onto fresh fish tacos or scrambled eggs in the morning. The possibilities are endless with this dip.
HEALTHY AVOCADO DIP
Makes 1 cup
1 large peeled and pitted avocado
2/3 cup plain greek yogurt, goat yogurt, coconut yogurt, or almond yogurt
1 diced tomato
Squirt of lime juice
Dash or two of cayenne pepper or small jalapeño chopped with seeds removed
Sea salt and black pepper
Fresh chopped cilantro
Mash avocado with a fork until very smooth. Add the yogurt, tomato, and cayenne and blend until smooth. This may also be done in a food processor. Then add the sea salt and fresh black pepper to taste. Top with chopped cilantro to garnish.
Serve chilled with mixed raw vegetables.
Tip: Best made a maximum of 1 hour before serving.
